Go-to polenta dish (easy)
For a vegetarian supper, nothing beats beans with vegetables over sliced polenta. Just buy the already-cooked tube of polenta at the grocery store. Slice it into pieces about 1/12 inches thick and saute in a little olive oil. As a topping, simply saute onion, mushrooms, peppers and garlic. Add chopped tomatoes (canned or fresh), herbs and spices of your choice, and a can of drained and rinsed white or black beans. You can include more protein, such as sausage or chicken, if desired, but I prefer the vegetarian version. Spoon the hot topping over the polenta slices and sprinkle with a little cheese.
My day job is college professor -- of mass communication and journalism, at the University of Cincinnati. I've probably got a few more years to go, and it's a good gig. Love to travel, cook, dine out, and work out.
