Great Ideas for Getting/Staying Healthy -- from Top-Notch Chefs
Check out these diet and fitness tips from eight celebrated American chefs, including Elizabeth Falkner (at left), who among them have lost about 600 pounds. How? Creativity in the kitchen -- squeezing every ounce of flavor out of healthful ingredients, for instance; knowing when to indulge and when (most of the time) to hold back; and figuring out all kinds of clever ways to move their butts, also known as exercise. Some of their advice: cut down on portion sizes, learn how to boost the flavor of healthful foods, eat more plants (an idea I fully support, even though I am not vegetarian), and don't skip breakfast, ever.

My day job is college professor -- of mass communication and journalism, at the University of Cincinnati. I've probably got a few more years to go, and it's a good gig. Love to travel, cook, dine out, and work out.
